Isn’t it amazing how food can trigger emotions and bring back memories? A dish that I find extremely comforting is actually a Puerto Rican dish called, Sopa de Leche (which translates to Milk Soup in English). Not only is it delicious and hearty, it also reminds me of my mom because she is the one that makes it for me, especially whenever I was under the weather. Even as an adult, I still ask my mom to make it for me. There’s something about it that makes me feel better and reminds me that I will always be her baby.

This time, I gave it a shot and made some for my family and thankfully it came out so good! Plus, it was really easy to make. So, if you are looking for a dish that is comforting, you should give this a try.

Sopa de Leche

Sopa De Leche Recipe

Ingredients

  • 4 cups of fresh milk
  • 6 cups of water
  • 2 cups of rice
  • 2 teaspoons of salt

Directions

  • Boil 6 cups of water
  • Wash and drain the rice and add to the water
  • Add 2 teaspoons of salt
  • Bring to boil and then put heat on Medium
  • Boil for 20 minutes stirring occasionally
  • Lower the heat to low and simmer for about 10 minutes or until rice is tended.
  • Once water has evaporated and you feel it needs more, pour in enough milk to cover the rice.
  • Once rice is tender, remove from the heat and add remaining milk.
  • Serve the Sopa De Leche and Enjoy!!!

*The rice will continue to soak up the milk, so I would serve it immediately (be careful, it’s hot). You can always continue to add milk as needed. Actually, by pouring in cold milk your soup will cool down faster.
