No matter what you call them, Snowballs, wedding cookies, or tea cakes, we can all agree that they are delicious! That’s why I wanted to share this Lemon Snowball Cookies recipe with you. They are perfect for family dinners or any entertaining you may be doing.
Lemon Snowball Cookies Recipe
Ingredients
- 1/2 cup powdered sugar
- 1 cup of unsalted sweet cream butter, softened/room temperature
- 2 ¼ cup of flour
- 1 tbsp freshly squeezed lemon juice
- 1 large lemon, zested
- ¼ tsp kosher salt
- ¾ cup of powdered sugar to roll the cookies in
- Small scooper
Directions
- Preheat oven to 350 degrees and line two cookie sheets with a silicone mat
- Using a large bowl and hand mixer, beat the butter and powdered sugar until combined
- Mix in the lemon juice
- Using a medium bowl whisk together the flour, salt, and lemon zest
- Gradually mix in the dry ingredients until the dough comes togetherÂ
- Using the scooper, scoop some dough into your hands and roll it into a ballÂ
- Place onto the cookie sheetsÂ
- Repeat the steps above and roll 14 more balls onto the first cookie sheet
- Repeat those steps again and roll 15 balls onto the second trayÂ
- Place them into the oven and bake for 13-15 minutesÂ
- Allow them to cool for a few minutes
- Using a medium bowl, add in the ¾ cup of the powdered sugarÂ
- Roll each cookie into the powdered sugarÂ
- Allow to completely cool and enjoy!
This Lemon Snowball Cookies recipe makes 30 cookies, which is a pretty good amount. But depending on how many you need, you may want to make more than one batch…because yes, they are that good.
